APPLE - UNDER PUDDING CAKE 
2 tbsp. butter
4 c. chopped apples
1/3 c. sugar
1/2 tsp. cinnamon
1/2 c. water
1 tbsp. lemon juice
1 c. flour
1/2 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
1/3 c. milk
1/4 c. shortening
1 egg
1 tsp. vanilla

Melt butter in 8 inch pan. Arrange apples on butter. Combine 1/3 cup sugar and cinnamon. Sprinkle on apples. Pour water and lemon juice over apples. Combine flour, 1/2 cup sugar, baking powder, and salt; stir well. Add milk, shortening, egg, and vanilla. Mix 30 seconds. Beat at medium speed for 2 minutes. Spread over apples. Bake at 375 degrees for 40 to 45 minutes.
