ALMOND CHEESE PIE | |
1 1/2 c. chocolate wafer crumbs 1 c. chopped blanched almonds 1 1/3 c. granulated sugar (divided) 1/2 c. butter, melted 8 oz. pkg. cream cheese 3 eggs, separated 1 tbsp. almond flavored liqueur 1 c. heavy cream Toasted buttered almonds Additional almond flavored liqueur - optional Make crust by mixing wafer crumbs, almonds, 1/3 cup sugar and butter. Press into lightly greased 9 inch springform pan. Beat cream cheese with remaining sugar in mixing bowl. Beat until fluffy. Add egg yolks and liqueur and set aside. Whip cream. Whip egg whites in separate bowl until stiff. Fold whipped cream and beaten egg whites into cream cheese mixture. Pour into chocolate crust. Freeze. When ready to serve, sprinkle top of pie with toasted, buttered almonds and drizzle with a few teaspoons of almond liqueur if desired. |
