PIEROGI 
4 lg. potatoes
1/2 tsp. salt
4-5 slices American cheese

Peel and boil potatoes for 20 minutes with salt. Drain water and mash. Add about 4 slices of cheese to potatoes. Set aside and let it cool.

DOUGH:

2 c. flour
1 egg
1/8 tsp. salt
1/2 c. water

Mix with fork, put flour, salt and egg in bowl. Add water to make smooth thin dough. Using 1/4 cup flour for pastry board cut 2 1/2 inch squares, put a little of the potatoes mix on each square, 1 teaspoon for each square. Pinch the edges together (triangle). Lay onto a dish towel. Then drop into a pan of boiling water (salted) boil for 5 minutes, then rinse with cold water. Then put into large bowl, put butter all over them.

Optional: You can also fry them. To fry, saute them into butter pan, turning once, 2 minutes on each side (optional ketchup).
