BEEF WITH PEPPERS AND TOMATOES 
1/4 c. soy sauce
2 tbsp. water
1 1/2 tsp. cornstarch
1 lb. flank steak
2 cloves garlic, chopped
3 tbsp. vegetable oil
2 1/2 c. coarsely diced green pepper
1 tsp. salt
1/2 tsp. pepper
2 lg. tomatoes, cut in wedges

Combine soy sauce and water with cornstarch; blend. Cut steak into thin slices, add to soy sauce mixture. Sprinkle with garlic. Heat oil in skillet. Add peppers and cook over medium heat, stirring well, until almost tender. Add beef, salt and pepper; mix well. Cook until meat is tender, about 15 minutes. Stir in tomatoes and continue cooking until tender. Make 4-6 servings. May be served with rice.
