VEAL CHOPS WITH MARSALA 
4 veal loin chops, 1 inch thick
1/4 c. butter
1/2 c. chicken broth
2 tbsp. flour
1/4 c. green onions, finely chopped
1/2 lb. mushrooms, cleaned, thinly sliced
1/4 c. sweet Marsala wine

Rub chops with flour. Brown in butter (3-5 minutes each side). Then add broth and Marsala. Simmer 10 minutes. Finally add green onions and mushrooms, simmer. Add 10 minutes. (Sprinkle with flour to thicken, stir). Serve over wild rice. Serves 4. May be doubled.
