EASY POTATO SOUP 
8-10 med. potatoes
4 c. milk
1/2 tsp. salt
1 tsp. pepper
5 tbsp. butter
1 c. onions, chopped

Peel potatoes, rinse and chop. Cook until slightly tender, salt, and pepper mashed potatoes a little. Add milk in a small pan, melt the butter and saute onions until tender. Add to mixture, heat to boiling.

I've always used bell pepper...1/2 of a large one, chopped.
If you them put about two cups of Grouper or any white firm fleshed fish you will have the best grouper chowder. Sprinkle crumbled bacon on top. See "grouper chowder"

I put chopped canned carrots (not raw carrots) to my potato soup and then about 2 cups of grated mild cheddar cheese 1 Onion or a half of a bunch of Leeks chopped, 4 or 5 cups of milk and a stick of margarine. I cook the potatoes until they come to a boil and then shut off the heat on my pot of potatoes and give them about 15 minutes to finish cooking on their own then by adding all the remaining stuff above it will stop the cooking process on the potatoes by putting in the cold milk and cold margarine and cold cheese along with a can of cut up carrots. With some Jiffy muffins it is delicious. You can also sautee some celery to add to the mix and add some real bacon bits on the top of the bowl of soup. I wonder what a can of cream of celery soup would do for the flavor???? Yummy.
