TINA'S TASTY CHICKEN SOUVLAKI 
1 to 2 lbs. chicken cutlets
1/4 c. olive oil (vegetable oils can be substituted)
1 1/2 lemons (juice of)
1 tbsp. chicken bouillon
1 tsp. oregano

Trim chicken cutlets and cube them (bite size pieces); set aside. Form a marinade by combining remaining ingredients. Add cubed chicken, cover and put in refrigerator for several hours or overnight. Place marinated chicken pieces on broiler pan. Cook approximately 5 minutes, turn over chicken pieces. Cook several more minutes under broiler. Chicken is done when browned and tender.

If desired serve on pita bread with red onion slices and/or yogurt.
