POTATO PANCAKES 
4 med. potatoes
2 eggs, beaten
1 onion, grated
1 tsp. salt
1/2 tsp. ground garlic
8 tbsp. all-purpose flour
1/2 c. milk
butter for frying

Peel and wash potatoes. Grate and drain well. Save liquid and let stand for 30 minutes.

Mix together eggs, onion, salt, and garlic. Add potato liquid along with flour and milk. Add potatoes and blend well. Add more liquid if consistency is too thick.

Melt 1 tablespoon butter in a skillet and fry spoonfuls of potato batter like pancakes until browned on both sides.

Serve with granulated sugar on top or spread with fruit jelly.
