OLD FASHIONED APPLE BUTTER STACK
CAKE
 
2 cups (4 sticks) butter
2 1/2 cups sugar (or half white/brown)
6 eggs
3 tsp. lemon extract
4 cups sifted all-purpose flour
1 1/2 tsp. baking powder
1 tsp. salt
1/2 to 3/4 cups molasses
about 1 cup thick apple butter

Cream butter and sugar; add eggs and beat well. Add lemon extract and blend. Sift dry ingredients together and add to creamed mixture. Add molasses, blending well.

Bake in 4 or 5 small round cake pans at 325°F for about 1 1/2 hours or until a clean butter knife inserted into the middle of cake comes out clean.
