ZUCCHINI CHINESE STYLE 
1/4 c. bacon fat or salad oil
1 lb. unpared zucchini or summer squash, sliced
Onion, thinly sliced
1 clove garlic
Soy sauce to taste

In skillet, heat bacon fat. Add zucchini, onion, garlic. Add soy sauce. Cook, covered until tender, about 10 minutes. Discard garlic.
