ORANGE CHICKEN 
1 chicken, skinned, cut up
2 tbsp. corn or safflower oil
1 lg. onion, sliced
Salt and pepper to taste
All purpose flour
1 can (6 oz.) frozen orange juice concentrate

Preheat oven to 350 degrees. Sprinkle chicken with salt and pepper. Coat with flour. In a large skillet heat oil over medium high heat until brown. Arrange chicken in a 9x13 inch baking dish. In skillet, saute onion in pan oil until tender. Spoon onion over chicken. Spread orange juice concentrate over chicken. Bake for 1 hour. Serve with rice. Servings for about 6 to 8.
