FRESH STRAWBERRY TART 
1 qt. fresh or frozen strawberries
1 c. sugar
4 tbsp. corn starch
1/4 tsp. salt
1 tbsp. lemon juice
1 1/4 c. cold water
Few drops red food coloring
1 c. Cool Whip or whipped cream
Baked 9 inch pie shell

Dissolve sugar in 1/2 cup water and bring to a boil. Add remaining water to corn starch to make a smooth paste. Add paste to mixture and cook until transparent. Remove from heat. Add salt, lemon and enough coloring to make a smooth shade of red.

Reserve 1 cup berries for garnish. Cut rest of berries into 2 to 3 pieces and pour mixture over them and let cool. Pour into baked pie shell. Garnish with whipped cream.
