REAL COUNTRY CORNBREAD | |
1 c. self-rising cornmeal 1/4 c. self-rising flour 2/3 c. buttermilk 1 egg Pinch of soda (size of a pea) 2 tbsp. oil (or bacon grease) 1 tbsp. flour This recipe calls for a 6" iron skillet. Preheat oven to 500 degrees. Put oil in skillet. Dust skillet with 1 tablespoon flour to prevent sticking. Mix all ingredients in this order. Stir cornmeal, flour and baking soda together. Add buttermilk, stir and add egg, mixing well. Pour into prepared skillet. Bake in 500 degree oven for 20 minutes. Remove immediately from skillet onto serving plate. Cut and serve hot. Serves 6. |
