NO BAKE CHOCOLATE-DIPPED NUT
BALLS
 
1 cup sifted confectioners' sugar
3/4 cup peanut butter
1 egg, lightly beaten
1 cup finely shredded coconut
1 cup finely cut dates
1/2 cup finely chopped nuts
1/4 teaspoon salt
1 teaspoon vanilla
1 cup semi-sweet chocolate pieces

In mixing bowl beat sugar and peanut butter until well blended. Beat in egg.

Stir in coconut, nuts, dates, salt and vanilla until well mixed. Shape into 1-inch balls.

Melt chocolate in top of double saucepan over hot water. Dip balls in chocolate until coated; set on wire rack until hardened.

Makes about 24.
