BREAKFAST BURRITOS 
1 doz. eggs
1 pkg. flour tortillas
1 (8 oz. or 2 c.) pkg. shredded cheese
1 can enchilada sauce (mild)
sour cream (optional)
salsa (optional)

Crack eggs into a bowl and add a little milk. Use wire whisk or fork to beat eggs. Scramble eggs in skillet. When eggs are done, take away from heat. Take flour tortilla and place a spoonful of eggs. Add little cheese and roll up. Place in baking dish, 9 x 13 size. Pour enchilada sauce over the burritos and sprinkle rest of cheese on top.

Bake at 350°F for about 10 minutes or until cheese has melted. Can serve with sour cream or salsa.

This is if you use a whole package of tortillas. If you want just two, then use two eggs for each burrito and use a smaller dish. Or if you don't want enchilada sauce, just place eggs in burrito, add cheese and roll up and eat.
