EGGPLANT "FRIED IN OVEN" 
1 med. eggplant, unpeeled
1 egg, beaten
1 tbsp. water
Flour
Garlic salt
Pepper
Oil

Cut eggplant into 1/2 inch rounds. Dip in egg beaten with water. Dip into flour mixed with garlic salt and pepper to taste. Brush cookie sheet with oil. Arrange eggplant in pan and drizzle with oil. Turn over after 15 minutes or when browned. Bake until browned on other side, about 10 minutes on each side. Bake at 375 degrees.
