SAVORY MEAT LOAF 
1 lb. ground beef
1/2 lb. ground veal
1/2 lb. ground pork
3/4 c. cracker crumbs
1/2 c. diced celery
1/4 c. diced onion
1/4 c. minced parsley
3/4 tsp. salt
1/4 tsp. pepper
3/4 c. milk
1 egg, slightly beaten
1/4 c. catsup
3 green pepper rings
Parsley springs (optional)

Preheat oven to 350 degrees. Combine beef, veal and pork; stir well. Add cracker crumbs and next 7 ingredients; stir well. Shape into a 9 x 6 inch loaf, and place on a lightly greased rack of a broiler pan, or shape and place in a loaf pan. Spread top and sides with catsup. Bake for 1 hour and 20 minutes. Top with green pepper rings; bake 10 minutes. Garnish with parsley, if desired.

NOTE: Baking the meat loaf on a broiler pan decrease calories because drippings fall into the broiler pan underneath rather than float in the loaf pan. Makes 8 servings.
