BEEF LIVER WITH PAN GRAVY 
1 lb. liver (beef)
1 med. onion, cut up (opt.)
1/2 c. + 1 tbsp. flour
1/2 c. + 1 tbsp. oil or shortening
Season to taste
1 1/2 c. water

Cut liver into 2"x4" strips (if desired). Season to taste. Dust with flour; set aside. Heat oil, add onion and saute until light brown. Remove to a dish. Add liver to pan, saute each piece turning each piece as it browns, starting with first piece in pan. Remove after sauteing. Put the 1 tablespoon of oil in pan. Heat until hot, add 1 tablespoon flour mix (stirring) until deep brown. Add 1 1/2 cups water (if too thick add more water). Add liver and onion, cover, reduce heat and let simmer 15 minutes.
