PICKLED BEETS WITH ONIONS 
1 can sliced beets or 2 c. sliced fresh cooked beets
1 med. onion, peeled and thinly sliced
1/2 c. cider vinegar
1/2 c. water
1/2 c. sugar
1 1/2 tsp. salt
6 whole cloves
1/2 tsp. mustard seeds
2 tbsp. horseradish

Drain beets (if freshly cooked), skin and slice and combine with onion. Combine vinegar, water, sugar, salt and spices (spices tied lightly in a cheesecloth bag). Bring to a boil. Reduce heat, cover and simmer gently for 10 minutes. Remove the spice bag and pour while hot over the beets and onion slices. Add horseradish. Cover, cool then chill thoroughly for several days.
