PICKLED ONION RINGS 
4 onions, sliced thin
1 c. vinegar
1 c. water
1/2 c. sugar
1/2 tsp. salt
1/8 tsp. pepper

Separate onions into rings and cover with boiling water. Let stand while mixing vinegar, water, etc. Drain boiling water from onions and add vinegar mixture. Marinate and chill at least an hour - but best if overnight. Keeps well in refrigerator for a few days.
