PERSIMMON PUDDING 
Baking pan - 13 x 9 inch. Heat oven to 350 degrees.

Mix together:

2 c. persimmon pulp
2 c. sugar

Add to this:

1 1/2 c. buttermilk
1/4 c. cream
2 beaten eggs
1 tsp. vanilla
1/2 c. butter, melted in pan in which the pudding will be baked

Sift together:

1 1/2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/4 tsp. salt
1/2 tsp. cinnamon

Mix all together. Bake around 50 minutes.

SYRUP:

Bring to boil:

1 c. sugar
1/2 c. water
1/2 tbsp. butter

After pudding is done, remove from oven long enough to pour hot syrup over it. Let bake for few minutes.
