FRUIT - FILLED COFFEE CAKE 
1 c. butter
4 eggs
3 c. flour
1/2 tsp. salt
2 tsp. baking powder
1 3/4 c. sugar
1 tsp. vanilla
1 c. confectioners sugar
1 tbsp. milk (enough for thin glaze)
1 can prepared pie filling (cherry, blueberry, apple, strawberry, pineapple)

Cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla. Sift together flour, salt, and baking powder; add to the egg and sugar batter, beating well. Mixture will be quite thick.

Reserve 1 cup of batter and set aside. Spread remaining dough on large, greased cookie sheet or 16x11 pan, or use 2 pie pans. Then spread pie filling on batter and dot with reserved batter on top. Bake in 350 degree oven for 35-40 minutes. Cool slightly and drizzle with glaze (beaten sugar and milk, blended).
