BANANA MUFFINS 
4 lbs. bananas
4 lbs. brown sugar
1/2 oz. salt
3 lbs. 8 oz. high gluten flour
3 oz. baking soda
1 lb. 4 oz. raisins
1 lb. 4 oz. chopped pecans
1 lb. 8 oz. milk
16 eggs
1 lb. 2 oz. oil

Break down the banana with sugar and salt. Don't cream up too much. Weigh carefully and mix a little. Add the oil to the mix in second speed for 8 minutes. Deposit on paper cup muffin tin, 3/4 full. Bake at 400 degrees.
