GOLDEN CARROT COOKIES 
1/2 c. shortening
1/2 c. butter
3/4 c. sugar
2 eggs
1 c. cooked carrots, mashed
2 tsp. baking powder
1/2 tsp. salt
3/4 c. shredded coconut

Cream shortenings, sugar and eggs. Mix in carrots. Blend in flour, baking powder and salt. Add coconut. Drop by teaspoonsful onto greased baking sheet. Bake at 375 degrees for 12 to 15 minutes. Cool and frost.

FROSTING:

1 1/2 tbsp. butter, soft
1 1/2 c. powdered sugar
1 1/2 tbsp. orange juice
2 tbsp. orange rind, grated

Beat all together and frost cookies.
