SWEET POTATO ROLLS 
2 pkgs. dry yeast
4 tbsp. sugar
1/2 c. mashed sweet potatoes
3 to 3 1/2 c. flour
3 tbsp. soft butter
1 tsp. salt
2 eggs

Combine yeast, 1/2 cup warm water, and 1 tablespoon sugar in mixing bowl; let stand 5 minutes. Then add remaining sugar and all other ingredients except flour. Mix well. Stir in 3 cups flour, turn out, knead 2 to 3 minutes (dough will be soft, do not knead too heavily).

Shape into ball; place in greased bowl. Cover with plastic wrap and let rise 1 hour. Punch down and let rest 2 minutes. Pull off pieces to form balls 1 1/4 inches in diameter. Place 2 inches apart on greased cookie sheet; let rise 1/2 hour. Bake at 375 degrees for 12- 15 minutes. Makes 3 1/2 dozen.
