WESTERN MEAL IN ONE | |
1 lb. ground beef 1 tbsp. vegetable oil 1 clove garlic 1/2 c. chopped onion 1/2 c. chopped green pepper 1 tsp. salt 1 tsp. chili powder 1 can (16 oz.) red beans, drained 2 1/2 c. tomatoes with juice, chopped 3/4 c. uncooked rice 3/4 c. grated Cheddar cheese 1/4 c. sliced black olives Brown beef in oil with garlic. Add onion and green pepper. Cook until transparent. Drain off fat. In a 2 quart casserole combine the meal mixture, salt, chili powder, beans, tomatoes and rice. Bake uncovered at 350 degrees for 30 minutes. Uncover and sprinkle with cheese and olives. Bake 15 minutes more. |
