WESTERN MEAL-IN-ONE | |
1 lb. ground beef or turkey 1 tbsp. salad oil 1 clove garlic, minced or mashed 1 tsp. salt 1 lg. onion, finely chopped 1 green pepper, seeded and chopped 1 tsp. chile powder 1 (1 lb.) can tomatoes 1 (1 lb.) kidney beans 3/4 c. uncooked rice 1/4 c. sliced ripe olives 3/4 c. shredded Cheddar cheese Brown the ground meat in oil (I don't use oil at all, just brown slowly) until crumbly. Add garlic, salt, onion, green pepper, and chile powder and saute for 5 minutes or until vegetables are limp. Mix in tomatoes, kidney beans, and rice and turn into a greased 2 quart casserole. (I just start the meat in my big casserole and bake it in same.) Bake, uncovered, in a 350 degree oven for 45 minutes. Sprinkle with olives and cheese, and continue baking for 15 minutes longer, or until cheese is melted. (If you assemble the casserole in the morning and refrigerate it, allow 1 1/2 hours for baking.) Makes 8 servings. Serve with tortillas. Also is great IN burrito size tortillas! |
