MY MOTHER'S FRIED CARROTS 
Peel and slice 1 pound carrots, slice like for carrot sticks, about 3 inches long. Melt 3 to 4 tablespoons butter in a heavy skillet, add raw carrots, salt and pepper; cover and fry at a low temperature until carrots start to become tender. Remove cover, turn burner to medium high and continue to fry until carrots are nicely browned. Onions may be sliced and added at the time the cover is removed or you may want to add a little brown sugar in the last few minutes of cooking.
