MOZZARELLA POTATOES 
8 big potatoes, cooked and peeled
4 tsp. dry chives
2 tsp. chopped parsley
1 c. sour cream (more, if desired)
2 tsp. baking powder
1 tsp. garlic salt
1 c. shredded Mozzarella cheese
2 tsp. butter
Paprika

Whip the first 6 ingredients together. Pour into buttered casserole dish (2 quart size). Top with cheese, paprika and several dots of butter. Bake in oven, 325 degrees, for 25 minutes; do not cover. Serves 8-10.
