KITTY'S ANISE DROPS 
3 eggs, room temperature
1 c. plus 2 tbsp. sugar
1 3/4 c. flour, sifted
1/2 tsp. baking powder
1/2 tsp. salt
3 tsp. anise seed or 1 tsp. anise extract

Beat eggs in electric mixer at medium speed until fluffy. Add sugar gradually and continue to beat about 20 minutes. Reduce speed of mixer, and add mixed dry ingredients. Beat another 3 minutes, add anise. Drop by teaspoonfuls onto a well greased cookie sheet, swirling dough to form a perfectly round cookie (at this point if you wish to decorate, sprinkle with confetti decorations). Let stand for at least 8 hours to dry. Bake at 325 degrees for 10 minutes, store in an airtight tin.
