MINI CHEESECAKES 
2 (8 oz.) cream cheese, softened
3/4 c. sugar
1 tbsp. real lemon juice
2 eggs
1 tsp. vanilla
Vanilla wafers

Blend together until smooth. Put cupcake paper in cake pan. Place a vanilla wafer in each cupcake paper. Fill each cup 3/4 full. Bake at 350 degrees for 18 minutes. Cool, then top with cherry pie filling or as you please.
