BLUEBERRY SALLY LUNN | |
2 c. sifted all purpose flour 3 tsp. baking powder 1/2 tsp. salt 1/2 c. soft butter 1/2 c. granulated sugar 2 eggs 3/4 c. milk 1 c. blueberries, washed and drained 2 tbsp. light brown sugar and 1/2 tsp. cinnamon (mix together) Preheat oven to 375 degrees. Grease an 9 inch square pan. Sift flour, baking powder and salt. In large bowl of mixer combine butter, granulated sugar, eggs, beat at high speed until fluffy. At low speed add dry ingredients alternately with milk. Fold in blueberries. Turn into prepared pan; sprinkle with brown sugar and cinnamon mixture. Bake about 30 minutes. Serve warm. Serves 9. |
