SEAFOOD CHOWDER | |
1/4 c. finely cut bacon or salt pork 1/4 c. finely cut onion 2 (7 oz. each) cans clams, lobster, or other seafood 2 c. cooked diced potatoes 2 c. milk 1 tsp. salt 1/8 tsp. pepper 1. Cook bacon in large frying pan for 1 to 2 minutes. Add onion; cook until golden, stirring two or three times. 2. Drain seafood in sieve; save the liquid. 3. Add seafood liquid and potatoes to bacon mixture; continue to cook until potatoes are tender. 4. Mince seafood with a knife and add with milk and seasonings to bacon mixture. Heat slowly to serving temperature. 4 servings. |
