CHICKEN SALAD COMBO CROISSANT 
3 c. chicken, cooked & chunked
1 c. celery, chopped
3 tbsp. parsley, chopped
1 c. grapes, green, halved
1/2 c. pimiento, chopped
1 tbsp. lemon juice
1 tbsp. cider vinegar
1 tbsp. oil
2 tbsp. honey
1/2 tsp. tarragon
1 c. Miracle Whip
8 lg. croissants
8 pineapple slices, well drained
16 crisp bacon strips

Mix together chicken, celery, parsley, grapes and pimientos; set aside. Whisk together lemon juice, cider vinegar, oil, honey and tarragon, until smooth. Add 1/2 cup Miracle Whip and blend. Stir dressing into the chicken mixture. Spread sliced croissants with remaining Miracle Whip. Cover with lettuce leaf, pile on chicken salad mixture. Cover with a pineapple slice and 2 bacon strips on each croissant. Yield: 8 servings.
