SCALLOPED CHICKEN 
1 med. size chicken (enough to make 1 qt. when cut up)
2 c. soft bread crumbs
1 c. cooked rice
1/4 c. pimento, cut fine if desired
4 eggs, well beaten
1 tsp. salt
1/4 c. melted butter or chicken fat
3 c. milk or half milk & half chicken stock

Mix ingredients in order named and pour into greased pan or Pyrex dish and bake at 325 degrees for 1 1/4 hours. Serve with canned mushroom soup warmed and spooned over top. (Turkey may be used in place of chicken.)
