SCALLOPED POTATOES 
6 c. sliced, raw potatoes, peeled
1 lb. bacon, sliced in 1 inch pieces
8 oz. sharp cheddar cheese, shredded
2-3 med. onions, diced
3 tbsp. flour
3 tbsp. butter
3 c. milk
1/4 tsp. salt
Dash of pepper

Layer sliced potatoes in greased 9 x 13 glass pan. Alternate layers of potatoes, bacon, cheese, onions, sprinkling some salt and pepper on each layer. Put cheese on last on last layer.

In saucepan mix melted butter with flour over low heat. Add milk, salt, and pepper. Stir over low to medium heat until white sauce thickens (it will not get too thick) and is smooth.

Pour white sauce over potatoes. Cook with foil which has been sprayed with oil or Pam, and bake at 275 degrees for 2 hours. Uncover last 30 minutes and turn up heat to 350 degrees to brown. But watch closely so as not to scorch.
