SALMON FRITTERS 
1 1/4 c. flour
1 1/2 tsp. baking powder
1 tsp. salt
1/4 c. corn meal
1 egg, slightly beaten
3/4 c. milk
1 (1 lb.) can salmon, drained

Sift together flour, baking powder, and salt. Stir in corn meal. Combine eggs and milk; stir into dry ingredients until just combined. Break salmon into bite size pieces and fold into batter. Drop by round tablespoons into deep fat (375 degrees). Fry 5 minutes. Drain on paper towels. Serve hot.

You may add chopped onions to batter.
