60 Ritz crackers, crumbed
1 stick butter, melted
1/2 c. chopped nuts (opt.)

Press cracker mixture into a big pan (13"x15"). Refrigerate while mixing this:

1 1/2 c. milk
2 pkgs. instant coconut cream pudding
1 1/2 qts. vanilla ice cream, softened

Beat ingredients and pour ice cream mixture over crackers. Refrigerate until firm. Top with Cool Whip and toasted coconut sprinkled on top. Can use vanilla pudding and no coconut on top.
