MANGO RELISH 
12 mangoes, red and green
12 onions
2 c. sugar
3 tbsp. salt
3 c. vinegar

Grind mangoes and onions. Pour boiling water, enough to cover, and let stand 5 minutes. Drain.

Make syrup, cook 5 minutes. Pour over drained mangoes and onion. Seal in glass jars.
