CHOCOLATE - MINT COOKIES 
1 c. sugar
1/2 c. butter
1 tsp. vanilla
1 egg
2 sqs. unsweetened chocolate, melted
1 c. flour
1/2 tsp. salt

Mix sugar, butter, vanilla, egg and unsweetened chocolate. Stir in flour and salt. Drop by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheets. Flatten each with greased bottom of a glass dipped in sugar. Heat oven to 375 degrees. Bake until set, about 8 minutes. Cool slightly; remove from cookie sheets. Cool completely. Spread peppermint frosting over each cookie, drizzle with chocolate glaze.

PEPPERMINT FROSTING:

1/2 c. 10X sugar
1/2 tsp. peppermint extract
1/4 c. butter, softened
3 tbsp. milk

Mix until smooth.

CHOCOLATE GLAZE:

Heat over low heat until melted. 2 tbsp. corn syrup 1 (6 oz.) pkg. chocolate chips

The cookie recipe is easy to make. I let the dough stiffen up for a few minutes in the refrigerator; then made balls rolled in sugar, spaced 2 inches apart, to flatten on the cookie sheet. Eight minutes cooking was just perfect. The cookies themselves are not too sweet and make a good base for the peppermint frosting. That 1/2 cup of sugar for the frosting is way off base, though. I used five times that amount for a total of 2-1/2 cups powdered sugar, and the frosting was divine. I didn't have any corn syrup, so I left it out of the chocolate glaze, and it was just fine. Even making the adjustments, this recipe is easy to make, tasty, and flashy looking.
