RICE SALAD | |
1 pkg. (10 oz.) cut green beans 1 tsp. salt 1/4 tsp. ground pepper 1 1/4 c. water 1 c. quick-cooking rice 1 c. mayonnaise 1/4 c. chopped red onion 1/2 c. sliced olives In 3 quart saucepan bring beans, salt, pepper and water to boil; cover and cook 5 minutes. Remove from heat. Add rice; let stand 15 minutes or until slightly cool. Stir in the mayonnaise, onion and olives until well mixed. Cover and refrigerate. Makes 4 cups. |
