KENTUCKY BURGOO 
1 lb. pork shank
1 lb. beef shank
1 stewing hen (about 4 lb. quartered)
1 gallon water
3/4 lb. Irish potatoes, diced
3 med. carrots, diced
1/2 green pepper, cleaned
1 c. chopped cabbage
2 c. tomato puree
1 c. corn
1 c. lima beans
1/2 c. okra
1 tsp. cayenne
1 pod hot red pepper
1 c. minced parsley
Salt
Onions
Worcestershire sauce

Boil pork, beef and hen in water until it falls off bone. Take all bones out. Add all vegetables and simmer about 6 to 8 hours until thick, stirring frequently. Add seasonings and parsley and simmer 30 minutes. Serves 12.
