MICROWAVE - SCALLOPED CORN 
2 c. fresh or cooked corn
2 eggs, beaten
1 tsp. salt
Dash of pepper
3/4 c. evaporated milk
1/2 c. cracker crumbs
2 tbsp. butter
1/4 c. thinly sliced green pepper

In a 1 1/2 quart glass casserole dish, combine corn, eggs, salt, pepper, and milk. Sprinkle top with cracker crumbs; dot with butter. Place pepper strips on top. Microwave on high 8 to 10 minutes, rotating 1/4 turn halfway through cooking. Rest 10 minutes before serving. Makes 4 to 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
