CHINESE NEW YEAR RICE 
3 tbsp. oil
1 lb. boneless chicken breast, cut bite size
3 1/2 c. chilled, cooked rice
3 green onions
1 stalk celery, diagonally sliced
1 sm.carrot, shredded
1 to 2 tbsp. soy sauce
1/8 tsp. black pepper

Heat oil in a large skillet or Wok, over medium high heat. Add chicken. Cook and stir until lightly browned. Add remaining ingredients. Cook and stir until heated through. Makes 6 servings.
