ZITI AND CHEESE WITH CAULIFLOWER 
8 oz. ziti, cooked and drained
10 oz. pkg. frozen cauliflower, cooked and cut into bite size pieces
4 tbsp. butter
4 tbsp. flour
2 1/3 c. milk
8 oz. grated Cheddar cheese
Salt and pepper to taste
2 tbsp. bread crumbs
2 tbsp. Parmesan cheese

Preheat oven to 350 degrees. Melt butter in a saucepan over medium heat and add in flour. Cook for 2 minutes, stirring constantly. Add milk and continue stirring until it thickens. Do not boil. Remove from heat and stir in cheese, salt and pepper. Continue whisking until all the cheese is melted.

Combine macaroni and cauliflower in 2 quart casserole dish. Pour sauce over the entire mixture. Top with bread crumbs and Parmesan cheese. Bake uncovered at 350 degrees for 25-30 minutes. Serves 4.
