SUWANEE CORN DINNER 
4 ears fresh corn or 1 can corn
3 tbsp. butter
1/2 c. minced onion
1/2 lb. fresh okra, cut into 1 inch chunks or 10 oz. frozen, thawed
2 c. cubed, cooked ham
1 lb. can tomatoes, broken up
1 tsp. salt
1/2 tsp. oregano leaves
1/8 tsp. ground black pepper

Remove husks and silk from corn, cut kernels off cobs, makes about 2 cups, set aside. In a large skillet melt butter, add onion and saute two minutes. Add okra, saute for five minutes. Stir in reserved corn, ham, tomatoes, salt, oregano, and pepper. Cook and stir uncovered for about five minutes, or until okra is crisp-tender.

Makes 4 portions.
