BISCOTTI DOLCI 
2 c. plus 2 tbsp. sifted all-purpose flour
4 tsp. baking powder
1/4 tsp. salt
3 eggs
5 tbsp. sugar
1/4 c. salad oil
1 tsp. almond extract (anise, lemon)

Heat oven to 400 degrees. Sift together first 3 ingredients. With egg beater lightly beat eggs; then beat in granulated sugar, salad oil and extract. Stir in flour mixture. With floured hands shape into 1 inch balls. (If hard to handle add little more sifted flour.) Place about 1 1/2 inches apart on greased cookie sheets. Bake 10 minutes or until lightly golden. Cool and frost. Makes 3 dozen.

While this cookie was light, I found that the amount of baking powder was too much and left a funny aftertaste to the cookie. I made the recipe again with half the baking powder and they were lovely. I give this a 4 as is as this is a great recipe--just too much of one ingredient. thanks!
