CARAMEL APPLE COOKIES 
1/2 c. shortening
1 1/3 c. brown sugar, firmly packed
1 egg
2 1/4 c. sifted flour + 3 tbsp.
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. ground cloves
1/2 tsp. nutmeg
1 c. raisins
1/2 c. apple juice or cider
1/2 tsp. salt
1 c. grated, peeled apples
1 c. walnuts, chopped

CARAMEL ICING:

1/4 c. butter
1/4 c. brown sugar, packed
1 1/2 c. powdered sugar, sifted
1/4 tsp. salt
2 1/2 tbsp. light cream or milk

Cream shortening, sugar and egg until light and fluffy. Sift together dry ingredients and add to creamed mixture. When well blended, stir in remaining ingredients. Drop by tablespoonfuls onto greased baking sheet. Bake at 350 degrees for 12 minutes. Makes 60 cookies.

CARAMEL ICING: Cook butter and brown sugar only until sugar dissolves, about 3 minutes. Add remaining ingredients. Stir until well blended.
