FRESH RHUBARB COBBLER 
1/3 c. sugar
1/8 tsp. cinnamon
1 1/2 c. rhubarb pieces
3 drops red food coloring
1 tbsp. butter
1 sm. can biscuits

Preheat oven to 400 degrees. Combine sugar, cinnamon, rhubarb, 1/2 cup water and food coloring in saucepan. Cook and stir until mixture begins to boil. Cook and stir 2 more minutes and stir in butter.

(1) Pour rhubarb mixture into 2 custard cups and top with a biscuit. OR

(2) Cut biscuits into quarters and put into casserole.

Pour mixture on top of biscuits. Bake either (1) or (2) at 400 degrees for 25-35 minutes or until biscuits are done. (#2 makes a dumpling-like dessert.) Serves 2. Can be doubled or tripled.
