HAWAIIAN HAM CASSEROLE 
1 (15 1/4 oz.) can pineapple chunks
1 tbsp. cornstarch
2 tbsp. vinegar
1/2 tsp. onion powder
1/4 tsp. ground ginger
Dash of ground red pepper
1 (8 oz.) can peach slices, drained
10 oz. ham, cut into strips

Drain pineapple, reserving 1/2 cup juice. For sauce, in a microwavable 1 3/4 quart casserole dish, combine the reserved pineapple juice, cornstarch, vinegar, onion powder, ginger and red pepper. Cook on 100% power (high) for 1 1/2 to 2 1/2 minutes, or until thickened and bubbly, stirring every 30 seconds.

Stir in peaches, pineapple and ham. Cook until hot thoroughly. Serve over rice and garnish with green onions. Serves 4.
